Recipe File: Prawns + Creamy Pesto Dip
1 kg/2 lb cooked medium prawns,
shelled, de-veined, tails left intact
2 carrots, cut into thick strips
7 oz baby carrots
½ cup/4 fl oz ready-made pesto
½ cup/4 fl oz whole egg mayonnaise
1. Dip: Combine pesto and mayonnaise in a bowl.
2. Transfer dip to a serving bowl. Place on a platter. Surround with prawns and carrots.
